Let’s Head Into The Kitchen To See How Dole Whip Treats Are Made
On National Dole Whip Day, we’re letting you into the kitchen to see how Disney’s delectable DOLE Whip creations come to life! Chef Amanda Lauder is taking us behind the scenes to showcase some of the incredible treats you can pick up at the theme parks and beyond to celebrate DOLE Whip Day.
One of the new DOLE Whip treats that recently debuted at Swirls on the Water as part of the Disney Springs Flavors of Florida celebration is the Orange Bird Sundae!
Chef Amanda was tasked with coming up with this goodie. As a starting point, she picked a flavor perfectly suited to the time/season. This also includes a deep dive into colors that would accurately represent the character featured. Chef Amanda has the fantastic privilege of choosing from a master list of DOLE Whip treats, soft-serve flavors, and toppings!
If that wasn’t awesome enough, from there, Chef Amanda heads to her “play” ice cream machine tucked away upstairs at Amorette’s Patisserie. Here, Chef Amanda and her fellow chefs can experiment with flavors, have taste tests, and perfect the ideal combination. “It’s pretty fun, I’m not going to lie. Just picking and choosing and getting to see that final product is very rewarding,” Chef Amanda said.
Chef Amanda and Co really outdid themselves with the Orange Bird Sundae. The Orange DOLE Whip sits in a waffle cone “nest.” Note how the orange perfectly matches the character in both flavor and color. Whipped cream adds an extra bit of sweetness to the sundae. Green sprinkles are then added to represent the leaves on his head.
Though the Orange Bird Sundae is perfect in its simplicity, Chef Amanda said that creating the ideal treat can take between 12 – 16 weeks. The team also must work well in advance to prepare for menu changes. “We try to plan the whole year,” she says. “And then as we go through the months, we go back to what our original plan was, and we see if it still fits or if we want to make changes.” That means that DOLE Whip treats have already been pre-planned through 2023 but Chef Amanda isn’t giving away what other delicious desserts are in the pipeline.
We found out another awesome fact about Swirls on the Water. Chef Amanda was able to locally source flavored and colored cones from a women-owned business. “I like to say they’re heavy-duty waffle cones,” explains Chef Amanda. “They hold up to the soft serve. When you’re eating and you get down to the cone, it actually has a crisp and a snap still left in it.”
Flavored cone varieties are also available from the same distributor so look for those to be incorporated into future Disney treats. There are an eclectic array of options including lavender, red velvet, matcha, and more. We suspect we’ll see them soon in Disney World’s rotating lineup of delicious DOLE Whip combos!
So where else can you find some of Chef Amanda’s incredible creations? She’s also the pastry chef at Amorette’s Patisserie in addition to her role as the “sweet consultant” for Swirls on the Water. Be sure to pop by Swirls on the Water and/or Amorette’s Patisserie during your next Disney Springs visit to give one of her incredible creations a try.
