Tasty Treat: Canadian Cheddar Cheese Soup
Comfort food … it makes us happy and often evokes memories of our childhood or reminds us of home. On cooler days, my grandmother always made the most amazing soup she called “Canadian soup”. I grew up on this creamy concoction and never really thought it was something that actually existed outside of her own kitchen. On our first visit as a married couple to Disney World, we visited Epcot’s International Food and Wine Festival. During our trip, we accidentally used every single snack credit on our dining plan to sample and try all of the amazing international foods located around the World Showcase. This was when I was first introduced to this week’s Tasty Treat Tuesday feature item – the Canadian Cheddar Cheese Soup.
What is it?
A creamy cheese soup made with sharp white cheddar cheese,
Moosehead Beer, and Nueske’s Applewood-smoked Bacon. Garnished with more crispy bits of bacon and chives. Often served with warm pretzel bread.
Why try it?
Served warm, this savory soup is packed with flavor! Chicken stock is infused with Moosehead Beer and a sauté of bacon, celery, onion and butter before thickened with milk to make a creamy base. Finished with a sharp white cheddar cheese for added creaminess and a shot of Tabasco. Moosehead Lager is brewed by Moosehead Breweries, Canada’s oldest independent brewery. The lager is a mellow beer that adds the perfect touch of yeasty notes to the soup giving depth and body to the simple base of broth and milk. The touch of tabasco is not overpowering, but gives just the right punch to fully enhance the pungent flavor of the white cheddar cheese. At one bite, the cream base blends with ale, cheese, onion, and bacon. It tastes like the most perfect bite of all the goodies that you add to a baked potato – without that pesky potato getting in the way of the goodness! Chives and bacon are described as garnish, but add a nice crunch to the otherwise silky smooth soup. With one bite, this soup from my “home away from home” reminded me instantly of my grandmother’s kitchen. Grandma would have been proud of this Canadian Soup and would have proudly served it on her own table!
Where can I find it?
Canadian Cheddar Cheese Soup is most famously found at the popular Signature Table Service Restaurant – Le Cellier Steakhouse in the Canada Pavilion at Epcot’s World Showcase. In the early years of Epcot’s opening, Le Cellier was a cafeteria style restaurant serving buffet food items. Who knew that? After a few years, Disney closed the buffeteria and re-imagined it into the dining experience we all know and love – Le Cellier Steakhouse.
When Le Cellier Steakhouse re-opened in 1997 after an extensive makeover, popularity surged. Guests flocked to this beautiful restaurant, located in the main building of the pavilion — Hotel du Canada — and designed to look like the old wine cellar below the hotel. One of the most iconic items on the menu was the Canadian Cheddar Cheese Soup appetizer. After years of popularity, you can now find this Tasty Treat at other locations in Epcot throughout the year. So, those looking to skip the fancy meal can still enjoy it annually at the Canada Outdoor Kitchen during Epcot’s International Food and Wine Festival. For a year-round treat, Refreshment Port often features this Tasty Treat on its menu. Or, if you want get really adventurous – try Refreshment Port’s “Signature Poutine” where it is the topping over french fries and cheese curds.
