Coffee Cake Cookie
In an already cult phenomenon is the Coffee Cake cookie that is starting to build its own cult following. This cookie is special from the others because it is only stocked in the morning. Once it is out, IT IS OUT!
Gideon’s Bakehouse describes the Coffee Cake cookie as an extra buttery vanilla bean cookie filled with cinnamon strudel and topped with our homemade double baked butter crumbs! Buttery. Crunchy. Extraordinary.
Let’s talk flavor: This cookie has split personality, I swear! The first nimbles on the edge where we got lots of the buttery crumbles took us to magical coffee cake land, but as we got closer to the middle the whole flavor profile changed!
The outside crumbs and coffee cake was good, but when we got to the buttery middle filled with layers of streusel we could barely control ourselves! This gooey delicious middle is like eating the best cookie dough that we have ever had!
Peanut Butter Cold Brew
An iced coffee is an iced coffee, is an iced coffee, right? WRONG! Gideon’s Bakehouse has an interesting selection of cold caffeinated beverages.
Once again, we tried them all and present you the best! Peanut Butter Cold Brew sounds…strange, but trust us, it is delicious! And we’re not even huge peanut butter fans. Do you remember Nutter Butter cookies?
This is them in iced coffee! Honestly, we couldn’t taste coffee at all but this was so good that we’re cool with it. This should not be your go to to get started with your day, but Peanut Butter Cold Brew is great for a cold, liquid dessert.

Gideon’s Bakehouse has inserted itself as the new cult classic bakeshop in Disney Springs. Even though the bakeshop opened in 2021, it still sees hours long waits and virtual queues.
That is impressive. Never has a restaurant or bakery had this type of popularity in Walt Disney World. Don’t worry, if you go early or on a weekday your wait should only be about 10 minutes.
Gideon’s Bakehouse has a solid Disney-level backstory. The story is that the owner was buying a macabre Victorian bookstore, but to their amazement they found the pages and margins of the books filled with cookie recipes and dreams of owning a bakery.
The only identifier in the books was the name “Gideon”. Hence Gideon’s Bakehouse. While you’re waiting in line be sure to look up towards the ceiling and around at the vintage books and Victorian era antiques with a dark twist.
