Our event took place inside of the restaurant, with the full name being Toledo – Tapas, Steak & Seafood. It’s a Spanish-style restaurant specializing in the items in its name!

Disney also shared a profile on Gina Greene, the Chef de Cuisine at Disney’s Coronado Springs Resort! She was born in Vietnam, grew up in a military family, and has resided in Florida longer than anywhere else.
Gina has been a chef for over 20 years and started her career in 1995 at Disney’s Grand Floridian Resort working in banquets! She has also worked at Tony’s Town Square, Chef Mickey’s, Sanaa, and many other Disney locations.

We started out with some Spanish wine…

…and a look at the entrees we were going to be trying!

We couldn’t wait to dive in.

The appetizers and tapas were brought out next. We started with the Spaniard, which is the chef’s signature selection of artisanal charcuterie and cheeses.
These were all very fresh and flavorful!

Next, we had the Pinxtos, which included chilled mussels ‘escabèche’, olive oil-poached tuna with lemon, and the ‘tortilla española’ Spanish potato omelet. We thought these were all delicious!

We also had the Tapas Trio, which included the gambas al ajillo (brick-oven shrimp, garlic-infused olive oil, herbed butter, and toasted bread), the rioja-braised chorizo (Spanish-style sausage, rioja wine, and onions) and the charred octopus (with patatas and chimichurri).

Next up, the entrees!
This is the Filet of Beef, which comes with forest mushrooms, red wine-date demi, and truffle vinaigrette. The filet was very juicy and tender, and the potatoes were tasty and creamy!

We also had the Plancha-seared Salmon with asparagus purée, vizcaina sauce, and seasonal garden vegetables. The salmon was cooked beautifully and the veggies were fresh and flavorful!

Other entrees included the Marinated Grilled Lamb Loin with potatoes, salsa verde, greens, and seasonal vegetables…

…and the Smoked Pork Chop with spinach fonduta, secreto, potato velouté, and crispy chorizo.

Finally, we had the Dessert Trio! This comes with the following:
- ‘The Toledo Tapas Bar’ — the flavors of Spanish coffee, crunchy chocolate, raspberry mousse, and lemon curd
- Basque Cheesecake — honey-vanilla sauce, almond crunch, honey-quince glazed seasonal fruit, white chocolate chantilly cream, and hibiscus tuile
- Classic Crema Catalana — Valencia orange and chocolate tuile

These were all incredible! The chocolate cake was unreal, and the cheesecake and crema catalana were also delightful.

As a goodbye gift, we were given this awesome trio of Spanish cookies!

Overall, Toledo is a great dining experience if you want some delicious Spanish flavors with an upscale ambiance. It’s a wonderful choice for fireworks views, a dinner where you can share items with your group, and an exciting wine selection!

Stay tuned for more Disney World news and updates!
