Palo offers a special dining experience on embarkation day (and only on embarkation day)–Prima Notte!

Prima Notte is a high-end experience, bringing guests Italian wine and small food pairings, guided by the ship’s sommelier.

The entire dining experience lasts 1 hour and 15 minutes and is only offered twice on embarkation night.
It’s $85 per person, with 18% gratuity added at the time of the experience.

The experience begins with a welcome toast, carried out with a sparkling wine.

We were served a seared ahi, paired with a crisp Italian white wine.
Unsurprisingly–as this is an expertly paired experience–the wine beautifully complimented the freshness of the tuna.

The next pairing was a gnocchi dish with mushroom sauce, accompanied by a classic Chianti.
The red wine enhanced the flavor of the mushroom sauce!

Then, they provided a Snake River Farms American Wagyu, paired with a bold red wine, which matched the beef’s richness.

For dessert, they served a 70% dark chocolate mousse with a sweet port wine.
This pairing balanced the bitterness of the chocolate with the fruitiness of the wine!

Overall
This is an incredible way to kick off your sailing, and an amazing excuse to get a “date night” in while the kids play at the youth clubs.
Even if you’re not a particularly big fan of wine, you can still appreciate the pairings.
