Korean Fried Chicken Bowl with Cucumber Namasu
Earlier this month, we shared about this new dish and gave you our review. Available at Disney’s Polynesian Village Resort, it was created by Chef Kevin Chong, in honor of Asian American Pacific Islander Heritage Month!

Kevin Chong is Executive Chef at Disney’s Grand Floridian Resort & Spa. Chef Kevin wanted to create Korean comfort food, inspired by his Mama Chong!
The dish features double-fried chicken thighs tossed with Gochujang sauce, sesame seeds, green onions, and pickled cucumbers (namasu). Yummy!

Chef Kevin shares, “I was born in Korea, but growing up in Hawaii helped me see the importance of celebrating diversity and understanding each other’s cultures. One of my favorite memories from living in Hawaii is the shared expression of Aloha – or love – through food.”
He adds, “Sharing a meal together is one of my favorite ways to experience different cultures.” Now, you can experience a different culture too, by recreating this meal at home!

Disney Parks Blog recently shared a printable version of the recipe, as seen in the photo above! There are several, individual components to this dish, that come together beautifully in the final product.
Included in the recipe are ingredients for the Cucumber Namasu, Gochujang sauce, Double-Fried Chicken Thighs, and Korean Fried Chicken Bowls. The directions instruct you on exactly how to put it all together, and serve!
