Spice Up Memorial Day with DCA Campfire Chili
One of my favorite things to do in between Disney vacations is to bring Disney into the kitchen!
What better way to kick off the start of summer than with a recipe inspired by Smokejumpers Grill Campfire Chili at Disney California Adventure!
This hearty Campfire Chili recipe is incredibly easy to make and can be modified to suit vegans, vegetarians and meat eaters alike!
Whether you are cooking on the stovetop or over a campfire, this recipe is sure to be a hit at any Memorial Day gathering! Let’s dive in!
What You Will Need:
Chili
• Vegetable Oil or Olive Oil
• 1 Sweet Onion (diced)
• 2 tsp Garlic (minced)
• 1 lbs. of Ground Beef (however, you can substitute Ground Turkey, Veggie Crumbles, etc.)
• 2 (15 oz.) cans of Black Beans
• 1 (15 oz.) can of Kidney Beans
• 2 (14.5 oz.) cans of crushed Tomatoes
• 2 Tbsp ground Cumin
• 1 Tbsp dried Oregano
• 1 Tbsp dried Basil
• 1 Tbsp Curry powder
• 1 Tbsp Salt
• 1 tsp ground Black Pepper
• 1 Tbsp Red Wine Vinegar
Cilantro Cream
• 1 C Sour Cream
• 1/2 C chopped fresh Cilantro
• Juice from 1 Lime
• 1 Scallion (chopped)
Let’s Get Cooking!
Next, you will want to grab a large pot or a cast iron dutch oven for over a fire. Chop up your sweet onion & garlic and sauté in oil over medium heat for about 3-5 minutes. Next, add your choice of protein and cook until browned.
After that, you will add the black beans, crushed tomatoes, oregano, basil, cumin, curry, salt, black pepper and red wine vinegar to the pot. Stir together and reduce heat to low (stirring occasionally) for 1 hour.
Meanwhile, it is time to make the Cilantro Cream! Place the sour cream, scallion, lime juice, and fresh cilantro (set a few leaves aside for garnish) in a blender. Blend until pureed.
Once the Campfire Chili is done, dish out into bowls and place a dollop of the Cilantro Cream on top and serve! Most importantly, this recipe got a 10/10 even from my picky eaters!
