Beignets are a staple in New Orleans at the Café du Monde. And of course, at Walt Disney World and Disneyland!
At Disney parks, you find them Mickey-shaped. This recipe is for traditional beignets, which are rectangular in shape.
A beignet is a type of fritter, or deep-fried pastry, typically made from pâte à choux, but may also be made from other types of dough, including yeast dough.
I love them fresh out of the oven, sprinkled with powdered sugar with an espresso to wash it down.
Here’s Tiana’s beignet recipe!
Ingredients
- 1/2 teaspoon dry yeast
- 1/4 cup warm water
- 1/4 cup sugar
- 2 tablespoons vegetable shortening
- 1/2 teaspoon salt
- 1/2 cup heavy cream
- 1 egg
- 4 cups all-purpose flour
- 1/2 cup boiling water
- Vegetable oil for frying
- Powdered sugar
Step one
Sprinkle yeast over warm water in a small bowl. Stir to dissolve.
Step two
Add sugar, shortening, salt, heavy cream, egg, flour, yeast and boiling water to a large bowl. Mix together.
Step three
Rest dough mixture for 30 minutes. Cover with a towel.
Step four
Roll out dough to 1/4-inch thickness and cut into individual squares. Let dough rise for two hours in a warm area. Again, you can cover with a dish towel.
Step five
Heat vegetable oil to 350º and fry beignets for two to three minutes, until golden brown. I usually only do two or three at a time, flipping them once or twice for an even fry.
Step six – last step!
Dust warm beignets with powdered sugar and enjoy!

As a fan of New Orleans (I worked at Disneyland in New Orleans Square – my favorite spot at Disneyland!), and as a fan of baking, I’m definitely going to try this recipe. It doesn’t look too hard!
