Their Disney Springs location has produced some mouth-watering menu options lately – including a Cookies & Cream Nitro Cold Brew and a lavish Rocky Road Cookie – but today’s latest announcement shares the arrival of their most elusive treat yet…

In an intriguing new fable shared on Gideon’s Facebook page, the bakery tells the tale of the mysterious Pipistrello – a peculiar, bat-looking character – who has been residing in their premises.
Residing quietly in the shadows, Pipistrello has been enjoying eating desserts whilst reading through their library and now, Gideon’s have decided to invent an all-new item to honor their little mascot.

Therefore, the Dark Coffee Cake Cookie has been created. With a chocolate cookie base and rich coffee flavor, this cookie will be available exclusively at Gideon’s Bakehouse Disney Springs location. Doesn’t it look divine?

However, a dessert for such a curious character deserves to be equally as elusive. That’s why this cookie will only be available at the bakehouse after dark!
To try this exotic new flavor, make sure you visit Gideon’s in The Landing at Disney Springs after sunset. But be quick – these will only be available until they sell out each night.

As well as this mouthwatering new cookie, Gideon’s have also chosen to honor Signore Pipistrello with a collection of exclusive merchandise.
A unisex t-shirt and sticker featuring the character will be available in store from Saturday, and can also be found online now.
