The Four Season’s Capa Steakhouse and Grill Shares Their “Arroz con Pollo” Recipe
If you’ve been to the Four Seasons Resort Orlando at Walt Disney World Resort then you know that no visit would be complete without a visit to Capa’s Steakhouse and Grill. A highlight of the menu has always been the delectable “Arroz con Pollo” dish and now, thanks to Chef Gabriel Massip, you can enjoy the finer things in life by recreating this hearty dish at home.
Let’s take a look at the recipe:
Arroz con Pollo, Capa Restaurant at Four Seasons Resort Orlando
Ingredients:
For the sofrito:
- 2 tablespoons of achiote paste
- 1 roughly diced white onion
- 1 head of garlic peeled
- 1 bunch of roughly chopped parsley
- 1 orange zest and pulp
- 1 bunch of cilantro roughly chopped
- 1 green bell pepper, seeded and roughly chopped
- 1 red bell pepper, seeded and roughly chopped
- 1 cup of extra virgin olive oil
- ½ cup of lemon juice
- 8 roma tomatoes, roughly chopped
- 8 habanero peppers, stem off
For the chicken and rice:
- 4 cups of chicken stock
- 2 cups of Rico rice or Calasparra rice or Bomba rice
- 1 red bell pepper small dice
- 1 red onion small dice
- 1 cup of frozen (defrosted) or fresh green peas
- 4 chicken legs
- 3 tablespoons of extra virgin olive oil
- 2 tablespoons of kosher salt
- 1 teaspoon of black pepper
Directions
For the sofrito:
- Bring all the ingredients together into a blender type (Vitamix or Ninja) and puree until smooth (no need to have something perfectly smooth but small chunks are fine).
- Once pureed, set aside.
For the chicken and rice:
- Preheat the oven at 350 F.
- In a cooking pot, add the olive oil and heat up. Season the chicken legs with salt and pepper, then sear skin down until crispy and golden brown color. Set aside once seared.
- In that same pot, add red onions and red peppers and cook until translucent.
- Add the rice and cook for 1 minute then add chicken stock, peas and ½ cup of the sofrito, then stir. Bring to a boil then add chicken legs on top. Cover with a lid and cook in the oven for 20 minutes.
- Check the consistency of your rice, and if the meat is falling off the bone. Depending on the size of your chicken legs it might take a little more time. At the end, check seasoning and add more salt if needed. (tip: once your rice is cooked you can finish it on the stove at medium heat and get the bottom of the pan crispy, this is what Spanish people are calling socarrat).
